Hello fellow foodies…
A while back I did a really easy and healthy cornbread recipe in cooking class to go along with a pork & squash chili that I made. It was really popular so I thought I’d share it with you below…
Moist & Healthy Cornbread
Makes an 8 x 8” pan
Ingredients:
1 cup flour (your choice)
1 cup cornmeal
1/4 cup sugar
1 tsp baking soda
3/4 tsp salt
1 cup plain yogurt (full fat preferably)
2 large eggs, beaten
Method:
Pre-heat oven to 400º F. Generously grease or butter an 8 x 8” pan.
Mix dry ingredients together in a bowl.
Stir the yogurt and eggs together and add them to the flour/cornmeal mixture. Stir to combine completely, but don’t over-mix. Pour into prepared pan. Bake for 18-20 minutes.
Serve warm or cooled… but I like mine warm. Great pairing for beans and chili!
